Ingredients:
4 cups Baby Spinach
2 cups Strawberries (sliced)
1/3 cup Feta Cheese, Reduced Fat (crumbled)
1/4 Red Onion (thinly sliced)
1/2 Avocado (sliced)
1/4 cup Pecans (chopped)
3 tbsps Balsamic Vinegar
1/4 cup Extra Virgin Olive Oil
2 tsps Dijon Mustard
1/8 tsp Black Pepper
Preparation
- Combine the spinach, strawberries, feta, onion, avocado, and nuts in a large bowl.
- Whisk together the olive oil, balsamic vinegar, Dijon mustard, poppy seeds, and black pepper in a separate bowl.
- Drizzle dressing over the salad and gently toss. Serve and enjoy!
