This refreshing summer salad brings together sweet strawberries, fresh spinach, crunchy pecans and creamy feta for a combination that’s both satisfying and delicious. Strawberries provide antioxidants, vitamins and fiber, while spinach is rich in nutrients that support heart, bone, eye and immune health. Pecans add protein, healthy fats and fiber, along with important vitamins and minerals.

Together, these wholesome ingredients make a colorful, nutrient-packed salad that’s easy to enjoy on a warm summer day.

Ingredients:

4 cups Baby Spinach
2 cups Strawberries (sliced)
1/3 cup Feta Cheese, Reduced Fat (crumbled)
1/4 Red Onion (thinly sliced)
1/2 Avocado (sliced)
1/4 cup Pecans (chopped)
3 tbsps Balsamic Vinegar
1/4 cup Extra Virgin Olive Oil
2 tsps Dijon Mustard
1/8 tsp Black Pepper

Preparation

  1. Combine the spinach, strawberries, feta, onion, avocado, and nuts in a large bowl.
  2. Whisk together the olive oil, balsamic vinegar, Dijon mustard, poppy seeds, and black pepper in a separate bowl.
  3. Drizzle dressing over the salad and gently toss. Serve and enjoy!
