Vegan Tuna Salad

Ingredients:

14 oz non GMO extra-firm tofu
6 tbsp vegan mayonnaise
3 tbsp mustard (yellow or Dijon)
1 tbsp lemon juice
1/2 tbsp sweet pickle juice
2 tsp garlic and onion powder
2 tbsp turmeric powder
1/8 tsp black pepper
1/4 tsp salt
1/4 cup nutritional yeast flakes

Preparation:

In a large bowl, mash the tofu with a potato masher. Add the rest of the ingredients and mix well with a fork. 
Chill for at least an hour prior to serving. 

The following are optional additions for herbs, spices, and vegetables: dill, celery seed, tarragon, cayenne pepper, black/white/pink ground pepper, onions, scallions, chives, sweet and/or hot peppers, green or black olives, dill or sweet pickles.
