Makes 4 servings
4 (4oz) Turkey breast, seared for color and baked till done
12 oz Green beans, steamed
1 tbsp Margarine
5 cups Apples, peeled, cubed
¼ cup Cranberries, dried
3 tbsp Brown sugar
3 tbsp Cider vinegar
2 tsp Ginger, peeled, minced
¼ tsp Salt
¼ tsp Dry mustard
1/8 tsp Allspice, ground
1. To prepare the chutney, melt the margarine in a nonstick skillet over medium-high heat. Add apples and sauté for 4 minutes or until lightly browned. Add the cranberries, and the next 6 ingredients, bring to a boil. Reduce heat, and simmer 8 minutes or until apples are tender.
2. To serve, add a 1/3 cup of the chutney over the turkey breast and the green beans on the side.
Optional: The chutney can be prepared the day prior to serve. If desired, rice or mashed potatoes can be served as a side.
